Beef Taco Meat Recipe

INGREDIENTS
- 1 tbsp olive oil
- 1 1/2 cups diced onion (2 yellow onions)
- Six cloves garlic
- 1 tsp salt
- 3 lbs lean ground beef
- 2 tbsp cumin
- 1 tbsp paprika
- 2 tsp oregano
- 1 tsp coriander
- 4 tbsp chili powder
- 2/3 cup tomato paste
- 2/3 cup beef stock
INSTRUCTIONS
- Heat the olive oil in a large skillet or pot over medium-high heat. Add the onion, garlic, and salt. Sauté for 4 minutes until the onion begins to soften.
- Add the ground beef and use a wooden spoon to break it up into smaller pieces. Cook for about 6 minutes until the beef has browned and is no longer pink.
- Stir in the cumin, paprika, oregano, coriander, chili powder, tomato paste, and beef stock. Let the meat simmer for 10-12 minutes until all the liquid has evaporated. Use a potato masher to break the meat into a crumbly texture. Taste the meat and add more chili powder, salt, or cumin if needed. Serve warm.
